Savoury breakfast muffins with Johnno’s Tomato Relish

Makes: 12 muffins

Ingredients:

  • 2 cups self-raising flour

  • ½ tsp baking powder

  • 1 cup grated cheese

  • ½ cup cooked bacon or ham, diced

  • ¼ cup spring onions, chopped

  • ¾ cup milk

  • 2 eggs

  • ¼ cup vegetable oil

  • ½ cup Johnno’s Tasmanian Tomato Relish

  • Extra relish, to serve


Method:

  1. Preheat oven to 180°C and grease a 12-hole muffin tin.

  2. In a large bowl, combine flour, baking powder, cheese, bacon, and spring onions.

  3. In a jug, whisk together milk, eggs, oil, and tomato relish. Pour into dry ingredients and stir until just combined.

  4. Divide evenly among muffin cups.

  5. Bake for 20–25 minutes or until golden and a skewer inserted comes out clean.

  6. Cool slightly and serve warm with a dollop of extra relish.
