
Savoury breakfast muffins with Johnno’s Tomato Relish
Makes: 12 muffins
Ready in: 35 minutes
Ingredients:

2 cups self-raising flour

½ tsp baking powder

1 cup grated cheese
-
½ cup cooked bacon or ham, diced

¼ cup spring onions, chopped

¾ cup milk
-
2 eggs
-
¼ cup vegetable oil
-
½ cup Johnno’s Tasmanian Tomato Relish

Extra relish, to serve
Method:

Preheat oven to 180°C and grease a 12-hole muffin tin.

In a large bowl, combine flour, baking powder, cheese, bacon, and spring onions.

In a jug, whisk together milk, eggs, oil, and tomato relish. Pour into dry ingredients and stir until just combined.

Divide evenly among muffin cups.

Bake for 20–25 minutes or until golden and a skewer inserted comes out clean.

Cool slightly and serve warm with a dollop of extra relish.
