Johnno's Homemade Tomato Relish

A timeless Aussie favourite, no pantry (or sandwich) is complete without a classic tomato relish. This recipe is the perfect way to preserve the sweetness of summer tomatoes. Combining fresh carrots, apples, and ripe tomatoes with carefully balanced spices, it creates a punchy, versatile condiment.

Simply add a bottle of Johnno's Make Your Own Sauce to your fresh ingredients, and you’ll have a richly flavoured relish that elevates everything from gourmet sausages and burgers, to sandwiches, cheese platters and grilled meats.

Prepared in a generous batch, this relish provides plenty to enjoy over time — or to share with friends and family who appreciate homemade, artisanal goodness.

Yields: ~ 10 kg (20 x 500 g jars)
Ready in: 2 hours


Ingredients:
  • 9 kg chopped tomato
  • 2 kg fine diced onion
  • 1 kg diced apple
  • 1 kg grated carrot
  • 2 kg sugar
  • 1 bottle Johnno's Make Your Own Sauce
  • 20 g mild curry powder
  • 100 g salt

Method:
  1. Peel and coarsely chop tomatoes; combine with remaining ingredients in large
    heavy-base saucepan.

  2. Stir over heat, without boiling, until sugar dissolves. Simmer, uncovered,
    stirring occasionally, about 1¼ hours or until mixture thickens.

  3. Spoon hot relish into hot sterilised jars; seal while hot.
